The Paris-Brest is a classic French dessert originally created in 1910 to celebrate the bicycle race between Paris and Brest.
Traditionally shaped like a wheel to represent a bicycle tire, it’s made with airy choux pastry and filled with a creamy hazelnut praliné diplomat cream.

Chocolate and vanilla Saint Honoré

A refined twist on the iconic French classic.
This Saint-Honoré celebrates the timeless pairing of chocolate and vanilla with a modern and indulgent touch. It begins with a delicate chocolate filo pastry base, bringing lightness and a subtle crisp texture.
A crown of chocolate choux pastries surrounds the cake, each filled with a silky vanilla diplomat cream. Hidden inside, a generous stracciatella cream conceals more chocolate and vanilla choux.
The cake is finished with a cloud of light vanilla whipped cream and topped with chocolate–vanilla choux coated in a crunchy chocolate and almond rocher glaze.
