Praliné Paris-Brest

The Paris-Brest is a classic French dessert originally created in 1910 to celebrate the bicycle race between Paris and Brest.

Traditionally shaped like a wheel to represent a bicycle tire, it’s made with airy choux pastry and filled with a luscious cream.

In this version, the Paris-Brest takes on a more delicate and elegant flower shape, and is filled with a light and creamy hazelnut praliné diplomat cream.
